Brownies are my weakness. If you can relate, you'll love this wholesome brownie recipe made with just a few simple ingredients. The secret ingredient being - black beans! I know, sounds a little cray, but trust me, these brownies are rich, fudgy, sweet, and one of the best brownies I’ve had to date. Never mind they’re loaded with fiber, omega-3s and tons of other good-for-you ingredients.
Here's my question: Why eat unhealthy brownies when you can have healthy ones that you love?
So, let's do this!
Brownie Ingredients
1 can black beans, drained & rinsed
2 flax eggs
2 T maple syrup
1/4 cup coconut oil, melted
1/2 cup coconut sugar
1/4 cup cacao powder
2 tsp baking powder
1/4 tsp salt
1/2 cup dark chocolate chunks
for the caramel sauce (optional)
1/4 cup coconut sugar
1/4 cup coconut oil, melted
1/4 cup maple syrup
1 tsp vanilla extract
1/2 cup peanut butter
1/4 cup almond milk
Instructions
1. Preheat oven to 350 F
2. Add black beans to a food processor and pulse
2. Prepare your flax eggs: 2 T flaxseed meal + 2.5 T water, stir let sit for a few minutes until it becomes thick (similar consistency to an egg)
3. Add maple syrup, flax eggs, coconut oil and vanilla and pulse together
4. Add cacao, sugar, baking powder and salt and pulse together until almost smooth
5. Chop up dark chocolate (if using a chocolate bar) into chunks or add chocolate chips and stir
6. Grease an 8x8 baking sheet with a small amount of coconut oil
7. Pour batter onto the pan and bake for 35 minutes or until edges harden
8. While the brownies cool, add the caramel ingredients to a saucepot over medium high heat, whisking together. Allow the mixture to come to a boil and then simmer for about 10 min, stirring every 1-2 minutes. The texture should be thick and drippy (but not watery)
9. Allow caramel to cool for 5-10 minutes and drizzle over brownies
10. Top with crushed peanuts/walnuts and sea salt flakes.
